Made in Napa Valley's Mediterranean Tapenade.
All the classic flavors of the Mediterranean -
Kalamata olives, capers and roasted red bell
pepper with a touch of Merlot wine to round it all out.
Only Kalamata olives are used in this recipe. Whole capers and sweet red bell peppers are blended with the large pieces of Kalamata olives to bring out the rich flavor.
This tapenade makes the perfect topping for pizza crusts finished with a little feta or goat cheese. Also great when cutting a baguette in half horizontally, generously spread on the Mediterranean tapenade, finish with feta or goat cheese and then put under the broiler until the cheese melts. Let sit for a couple of minutes and serve.
For something easy and quite gourmet, select a flank steak or de-boned chicken breast. Salt and pepper and sear both sides on the grill or in a sauté pan. Remove from the pan and spread our tapenade on one side. Add feta or goat cheese and roll and tie with kitchen string. Finish in oven until done to desired temperature. Awesome!
