Usage
Walnut oil is a delicious and easy-to-use oil. In salads, walnut oil mixes very well with balsamic vinegar or red wine vinegar to create a simple but flavorful vinaigrette. Also try it with tarragon white vinegar. It is also delicious on grilled fish or meat: A dab of walnut oil is the perfect touch for enhancing flavors and easing digestion when added towards the end of your beef bourguignon or meat dishes. Production process
La Tourangelle is the first oil mill in California to produce walnut oil using traditional French methods. After harvesting, the nuts are washed, sorted, sun-dried for several days and stored for further drying. The walnut kernels are then ground and roasted in cast-iron kettles. The resulting warm paste is pressed in a hydraulic press. Following mechanical extraction, the oil is lightly filtered and bottled. Walnut oil is extracted from English walnuts only.

Grapeseed oil has a light flavor and contains a high level of polyunsaturated fat. It can also be heated up to 485°F, making it the ideal healthy cooking partner.

Usage
The kitchen is where grapeseed oil comes into its prime. With a smoke point of 485°F, the oil is easy to use in cooking and will make burnt oil a thing of the past. The nutty flavor works well in vinaigrettes with any type of vinegar, never overwhelming the other ingredients. Grapeseed oil is also commonly blended with more intensely flavored oils. Wine production is a cherished tradition in France, Italy, Spain, California, Chile and now all over the world. There are events commemorating the annual harvest and every step in the winemaking process. Lost in all the commotion, however, is a little secret: Once they have finished making their wine, the winemakers gather all the seeds, dry them and bring them to their local oil mill. There, a somewhat arduous process begins. Since the seeds are so tiny and abrasive, powerful machines are required to crush them. The process is very time-consuming since the seeds contain less than 10% oil. Imagine the vast quantity of seeds needed to produce one drum of oil!

La Tourangelle has partnered with one of the oldest Japanese oil mills to bring you this toasted sesame oil, crafted in central Japan strictly following 270-year-old traditional methods.
According to La Tourangelle President Matthieu Kohlmeyer, “Our mill slowly roasts the sesame seeds using lower temperatures. The result is a lighter colored, more richly flavored oil with a subtle, toasted taste. Most Asian Sesame Oils available in the United States derive their dark, amber color and sometimes burnt flavor from the rapid, high temperature toasting of the sesame seeds.”

Usage
Sesame Oil has long been the universal cooking medium in Asia, imparting the characteristic flavor to the foods of its regions. Health benefits
Sesame Oil, also known as gingelly oil and til oil, is an ancient ingredient. The Assyrians used it as a cooking oil more than 600 years before Christ. It was expensive, however, and a hundred years later in Persia only the rich could afford it. It is still used as a medicine in India , and oil pressed from the raw seed is a massage oil in Ayurvedic medicine. Its low saturated fatty acid content and high unsaturated fatty acid content makes it a very healthy oil.

Production process
Our mill slowly roasts the sesame seeds using lower temperatures. The result is a lighter colored, more richly flavored oil with a subtle, toasted taste. The production of Sesame Oil begins with sesame seeds harvested from South America or Africa. The seeds are toasted and then expeller (machine) pressed to extract the oil. This oil is filtered several times and then bottled. The quality of Sesame Oil varies depending on the quality of the seeds, and the length and temperature of the toasting process. While nearly all the Sesame Oil now available in the U.S. and in Europe is produced in China or Taiwan using methods that involved certain production shortcuts, La Tourangelle's Japanese partner uses only the freshest, highest quality seeds that are painstakingly cleaned and slow toasted. Japanese craftsmanship in the production of sesame oil is recognized as superior throughout Asia.
