O’s Wine Vinegars start from premium varietal wines from near-by Napa Valley. The rich abundance of California’s wine country where the world’s finest grapes thrive. Pacific ocean breezes chill the night. The brilliant California sun warms the day.
Each of O's wine vinegars is hand crafted by a family of artisans who have been perfecting their art for generations. As soon as the wine arrives from the winemaker’s cave, O’s artisans begin the ancient alchemy of turning wine to vinegar.

In the traditional Orleans's method we fill ventilated oak barrels with premium wine. Seal in the California sun. (Most other vinegars in the market are mechanically aged using artificial flavors and ingredients resulting in what we believe is an inferior product.) O handcrafts each batch only in this ancient, organic Orlean’s process. Barrel aged. No chemicals. No preservatives. Just the rich, complex taste of premium wines. Aged over time.
O's Olive Oil begin in the misted foothills of the
Sierras of northern California where O hand-harvests ripe Mission olives from late December to February. Mission olives were first cultivated along the old mission route in California in the late 1700’s.
O selects olives grown naturally in the small farms that dot the northern valleys of California. Farms owned and cultivated by the same families for generations. The olives are hand-harvested into 1,000 lbs. wooden bins and rushed to the olive press where they are crushed within 48 hours.
ripe mission olives vary from rich black to reddish-purple to deep green. These pesticide-free olives produce a delicate and smooth oil to complement the crisp notes of the various citrus fruits that we crush together.
Since the beginning, O has used only certified organic citrus from small, family-owned California farms. Folks who love the land. No pesticides. No chemicals. No hormones. Just sweet, juicy, California lemons, oranges, grapefruits, limes, or clementines.
Organic citrus is crushed together with the fresh olives. It takes about 1½ lbs. of fresh, whole citrus to make each bottle of oil. We neither infuse nor flavor after the fact. You get the whole fruit. The difference is irresistible!
